I'd like to put some products on sale, but not all of them. The last time I put them on sale, too cheaply, they all got snapped up overnight, which created a problem for me.
Is there a way to limit the number of items on sale in the edit section, where I state dates of sale, etc?
Not sure if you are FBA or FBM - cannot answer for FBA, but for FBM you simply put the quantity that you want to be available in the quantity box.
I have had a look at one of our listings, in the FBA inventory > edit listing and can see there is a maximum order quantity section under the offer tab. This could prevent one person just buying all your discounted stock. When you mention too cheaply, there is options showing that refer to Minimum Seller Alllowed Price and Maximum Seller Allowed Price which could be useful to you. There is also sale start date and end date options too.
I don't believe there is much more for FBA apart from limiting the quantity per person and the time the "sale" is on.

If you're using FBA, look under the Advertising / Price Discounts menu - you can setup a product specific discount here and it allows you to specify the number of units available at the discounted price, you can also specify whether the discount applies to All customers or Prime customers only and start/end dates.
One thing - there could be a minimum discount amount or percent you have to meet - I can't remember exactly.

Create a new SKU so you can control the amount available - and then implement max quantity purchasable per customer.
