I am calling GetOrder and it is returning the ShippingAddress but it is missing Name and AddressLine1 so I cannot fulfill the order. What is going on? This was working fine a few hours ago and it just started not working…

Amazon may have turned off your access to PII (Personally Identifiable Information). I suggest you open a case under your seller account and ask your question there. If what I suspect is correct, you will need to request access to that information again and maybe go through an approval process.
