Read onlyEvery month my credit card is charged a few amounts that it attributes to Amazon. But these charges are never accompanied by an email or receipt or any type of notification. I can't find matching charges anywhere in my Amazon seller account. What am I missing?

Can you please provide us with the amount(s) of the charges that you see on your statement so that we can take a look.
Also, have you tried reaching out to seller support yet? they will be able to reserach the transactions on their end as well.

One possible answer (just a guess, not enough info) is that you are getting charged the monthly selling fee for Mexico, Brazil, and/or Canada. If you have any listings (active or not) in any of those marketplaces, the Pro Seller fee will be split among the markets, even if they are on permanent vacation. Since you don't have sales there, they can't take it from the balance, and instead will charge your card. Not a big deal, as the total is still $39.99 (with minor variations due to exchange rates), but it's a bookkeeping hassle.
If you are not selling in those markets, make sure that they are on vacation, and that there are no listings on any of them. If this is the cause of the charges, it should clear in the next cycle.
